With 23 years of culinary leadership across some of the Bay Area’s most dynamic kitchens, Adam has spent his career mastering the art of food that feels both refined and deeply personal. His San Francisco years took him through French-American fine dining, Asian fusion, gastropub, and classic American — building a range of technique and flavor instinct that few chefs can match.

After relocating to Sacramento, he opened Polanco, a modern Mexican restaurant that earned a following for its commitment to bold, traditional flavors elevated through precise, contemporary technique. Most recently, he spent six years as Executive Chef at Shangri-La in Fair Oaks, where he led menu development and created the kind of guest experiences that keep people coming back.

Now he brings all of that to your table — literally. Chef Adam works with each client individually, learning what you love, what the occasion calls for, and what will make your guests feel something. No template menus. No generic experiences. Just exceptional food, crafted entirely around you.
